Metabolome and Transcriptome Analysis Reveal the Accumulation Mechanism of Carotenoids and the Causes of Color Differences in Persimmon (Diospyros kaki Thunb.) Fruits

To explore the mechanisms of color formation different colored persimmon fruits, we used two cultivars (yellow-peeled fruit ‘Zhongshi No.6’ and red-peeled ‘Hongdenglong’) as materials to study synthesis accumulation carotenoids in three stages (full green, transition, full yellow or red) using targeted metabolomic transcriptomic methods. A total 14 30 carotenoid lipids were identified peel cultivars. After analysis, it was found that content red cultivar higher than cultivar. The contents lycopene, ?-carotenoid, ?-carotenoid, (E/Z)-phytoene, ?-cryptoxanthin are main reasons for difference between cultivars, especially lycopene. Twelve structural genes involved metabolism also this study. In comprehensive metabolome transcriptome that, lycopene key metabolite responsible difference, PSY, LCYE, ZDS regulated differences accumulation. results provide us with new information regarding addition, they a theoretical foundation improving germplasm.
